vegan mofo: lightening hot tofu nuggets



The last installment for Percy Jackson MoFo: Lightening Hot Tofu Nuggets. Get it? Lightening hot...Lightening Thief...LIGHTENING. Eh..anyway. These are tasty, spicy and an awesome use of tofu. LOVE.

Lightening Hot Tofu Nuggets
  • 6 - 8oz. super firm tofu (or firm tofu, pressed, frozen and thawed) and cut into nuggety shapes
  • Enough oil to generously coat the bottom of a medium skillet
Marinade:
  • 1 tbls. soy sauce
  • 1/4 c. water
  • 1/2 tsp. vegetable broth powder
  • 1 tsp. cornstarch
  • 2 - 3 tbls. sriracha sauce

Breading:
  • 1/4 c. flour
  • 2 tbls. bread crumbs
  • 2 tbls. cornmeal
  • 1/2 tsp. oregano
  • 1/2 tsp. garlic powder
  • 1 tsp. salt
1. Combine all the ingredients for the marinade. Add the tofu, making sure all the sides are coated. Let the tofu sit in the marinade for at least half an hour, stirring and turning once half way through to give each piece a chance to soak.
2. Once the tofu is marinated to your liking, start heating the oil over medium-high heat. Mix together the ingredients for the breading.
3. Bread each piece of tofu. When the oil is hot enough (really hot, but not smoking!) add the breaded tofus. Fry on each side. Drain on a paper towel or cooling rack. Serve hot! To make them super hot, I dip the tofu in sriracha. Crazy, but delicious.
